    1. Blanch the bones – Place the beef bones and brisket in a large pot, cover with water, and bring to a boil. Simmer for 10 minutes to remove impurities.
    2. Drain and rinse the bones and brisket under cold water. Clean the pot.


    Step 2: Toast the Spices & Aromatics
    3. In a dry pan, toast the star anise, cloves, cinnamon, coriander, fennel, and cardamom over medium heat until fragrant (2-3 minutes).
    4. Char the onion and ginger over an open flame or in a dry pan until blackened. This deepens the flavor.


    Step 3: Simmer the Broth
    5. Return the cleaned bones and brisket to the pot. Add 10 cups of water.
    6. Add the toasted spices, charred onion, and ginger.
    7. Season with fish sauce, sugar, and salt.
    8. Bring to a boil, then reduce heat to a gentle simmer. Simmer uncovered for 4-6 hours (the longer, the better).
    9. Skim off any foam and fat that rises to the surface.
    10. After 1.5 hours, remove the brisket and let it cool. Slice thinly.
